Apple Quinoa Crumble

This delicious and decadent apple crumble packs in extra nutrients with the addition of protein-rich quinoa. The ingredients are simple, real, and free from anything refined. It’s filled with sweet cinnamon apples and a buttery crumble, making this dessert a sure winner! This recipe uses egg. Not me! Add a 1/2 tsp agar agar (found at Greentree) instead. 

INGREDIENTS

Serves 6 

3 McIntosh apples
1-1/2 cups gluten-free flour, divided
1-1/2 cups coconut palm sugar, divided
1 tbsp cinnamon, or to taste
sea salt, to taste
1/2 cup melted butter
1/2 cup cooked quinoa
1 egg
INSTRUCTIONS

Preheat oven to 375°F.

Rinse, peel (if not organic), core, and slice apples into wedges.

Toss in large bowl with 1/2 cup flour, 1/2 cup coconut palm sugar, cinnamon, and sea salt. Coat well.

Rub a little butter in the bottom of a 10-inch pie dish and arrange apples in it.

In another large bowl, combine 1 cup flour, quinoa, 1 cup coconut palm sugar, cinnamon, and sea salt. Mix well.

Add beaten egg to dry ingredients.

Drizzle in melted butter and mix until crumbles form. Arrange crumble mixture over apples.

Bake for 30 minutes or until golden brown and bubbly.
